The Italians love their coffees roasted as dark as possible without burning the beans. This is achieved by carefully monitoring the beans during the process, which extends beyond that required for French roast flavor. The beans continue roasting as they emit their shiny oils, develop their black color and evolve their smoky, pungent flavor.
